This medium sweet Riesling made in a Spätlese style is full of inviting aromas of lemon and lime, white flower, stone fruit and mandarin. The finish is extremely long, fresh, crisp and mineral and is beautifully balanced with the residual sweetness. A superb example of an aged Riesling that will develop even more over time. The Waitaki Valley in North Otago is renowned for its limestone rich soils which give great minerality and focus to the wines. The maritime climate makes the North Otago region different to the more highly planted semi- continental Central Otago region and the unique limestone rich soils result in wines with crunchy natural acidity and distinctive minerality.
The fruit is 100% hand harvested Riesling from the Waitaki Valley. The fruit was whole bunch pressed to a stainless steel tank for cold settling for two days. The juice was then racked and the juice inoculated with selected wine yeast. The cool fermentation was stopped to retain a Spätlese style.
