Wild Earth Pinot Noir 2010

The 2010 Wild Earth Pinot Noir displays a deep strong purple hue. Aromatics of Morello cherry, cassis, leather and dry spice are more prominent with a lingering undercurrent of leather. Firm tannins build structure and carry on through to the finish. Persistence is the hallmark of the 2010 Pinot Noir, giving it lasting pleasure.

The fruit was harvested throughout early April, around the seasonal norm. Harvested in 5 to 7 tons lots depending on the clone and ripeness, they were fermented separately to ensure consistency. Open top fermenters were employed for the primarily destemmed fruit. The must was left for 5 days to ensure proper colour extraction with a light pump over to ensure the cap was moistened. During fermentation the wine was twice daily plunged with a peak temperature of 32C. After fermenting to dryness the wine was left on skins to extract the ideal amount of tannin, colour and aromatics. Long barrel aging in French Oak and malolactic fermentation to mellow the wines completed the journey.
